Meet the Barista: Tommy Yap

Tommy Yap Boon Wooi

Coming from the background of biotechnology and molecular science study which is some distance away from coffee making and cafe management, Tommy has come a long way to learn the trade in the industry. It all started when he chanced upon this tiny shop lot along Stewart Lane, and together with his ex-university mate, they decided to give it a shot to start up a specialty coffee shop serving honest good coffee and freshly prepared desserts.

Tommy’s take on specialty coffee industry, at least in George Town, Penang where he was born and raised, is that it can never replace the traditional coffee served in the kopitiam and mamak stall. Instead, this traditional coffee culture provides a good medium to cultivate a relatively new specialty coffee culture.

In order to entice the mass market to specialty coffee, Tommy believes and prefers using easy-to-understand graphic information as an effective communication tool, as opposed to difficult industry-specific terms.
